Optimization of Taftoon Bread Shelf Life Using different Packings

با توجه به اینکه یکی از مهمترین دلایل ضایعات زیاد نانهای ایرانی، عدم بستهبندی و نگهداری صحیح این محصول است، در این پژوهش بعد از تعیین بهترین دما، برای بستهبندی، اثر سه نوع لایه پلاستیکی، لفاف دو لایه از پلی پروپیلن جهتدار شده و پلی اتیلن (OPP/PE) با ضخامت 60 میکرون، لفاف سه لایه متشکل از پلیاتیلن و پلیپروپیلن (PP/PE/PE) با ضخامت 70 میکرون و پلیاتیلن دو لایه با ضخامت 30 میکرون به همراه استفاده از کارتن و پلاستیک بر خصوصیات نان تافتون تهیه شده از آرد تیپ 800 تا 72 ساعت پس از پخت مورد بررسی قرار گرفت. دو دامنه دما برای بستهبندی شامل 20 تا 25 و 40 تا 50 درجه سانتیگراد منظور شد. نتایج آزمونهای اندازهگیری رطوبت و فعالیت آبی نشان داد که بین خصوصیات نان بستهبندی شده در لایههای مختلف تفاوت معنیداری (01/P<0 ) وجود دارد و درصد رطوبت و فعالیت آبی (α<sub>w</sub>) در لایههای با نفوذپذیری بالا نسبت به رطوبت و بخار آب کمتر بود، در نتیجه رشد کپکها در این نوع بستهبندیها کاهش یافت، ولی کاهش درصد رطوبت نان، باعث کم شدن امتیاز نهایی و میزان بیاتی نان شد. همچنین مشخص شد که استفاده از لایه کارتنی که دو طرف آن با کاغذ پلیاتیلندار پوشانده شده است باعث ایجاد تفاوت معنیدار در نتایج بهدست آمده در آزمونهای کیفی نان بستهبندی شده با این روش نمیشود. در این پژوهش مشخص شد که استفاده از تعداد زیادی قطعات نان در ابعاد 10 × 10 سانتیمتر در یک بستهبندی به همراه کارتن و پلاستیک مناسب بوده و وجود کارتن باعث حفظ شکل و خصوصیات بستهبندی نان در طول حمل و نقل و همچنین نگهداری آن میشود.
Iranian flat breads generally have short shelf life. The result of this situation is usually enormous bread wastage. Among the most important factors involved are lack of proper packing and storage methods. In this study, the best temperature for bread packing was determined and the effects of three types of plastic wrapping on Taftoon bread baked of the typical flour were investigated after 72 hours of storage. These wrappings included a two-layer wrapping of oriented polypropylene and polyethylene (OPP/PE) with a thickness of 60 µ, a three-layer wrapping of PP/PE/PE with a thickness of 70 µ, and a two-layer polyethylene with a thickness of 70 µ together with cardboard and plastic. Bread packing was carried out at two different temperature ranges (20-25<sup>o</sup>C and 45-50<sup>o</sup>C). Results from moisture measurements and water activity test indicated that the characteristics of breads packed in different wrappings showed significant differences (p<0.01). Moisture percentage and water activity (a<sub>w</sub>) were lower in layers with higher permeability to moisture and water vapor and, consequently, algal growths reduced in these wrappings. Reduced moisture content, however, reduced the final bread quality score. It was also found that employing cardboard covered in polyethylene had no significant effect on bread shelf life during 72 hours of bread storage. Another finding from the present study was that packing a large number of 10×10 cm bread pieces within one single wrapping with cardboard and plastic was satisfactory and that the presence of the cardboard helped maintain bread shape during transportation and storage.
